Open the note.
Press Ctrl + P (⌘ + P on a Mac) and run Show version history. You can also open it from the Info tab in the right panel.
Pick a version from the list to see the note as it was then.
Choose Restore. The note goes back to that version.
Restoring doesn't erase anything. The version you replaced stays in the history too, so you can always change your mind.
